Usually when I add in recipes to the newspaper, I have a fun seasonal theme or recipes that connect in some way. Today I just have the best banana bread recipe that I’ve ever made, and I wanted to share it with the world because everyone deserves delicious banana bread—unless you are allergic to bananas!
3 mashed bananas
1/4 cup yogurt
1/4 cup coconut sugar
1/2 Tbsp ACV
1 1/2 Tbsp melted coconut oil
3/4 cup coconut flour
1/4 cup shredded coconut
1 tsp baking soda
1 tsp baking powder
1/2 cup chocolate chips
Many more chocolate chips and shredded coconut for topping
- Preheat the oven to 350 degrees and line a loaf pan with parchment paper.
- Combine all ingredients and stir well.
- Pour into the loaf pan and spread evenly. Sprinkle on more chocolate chips and shredded coconut.
- Bake 29-32 minutes or until a toothpick comes out clean.
